Henry Flame cookware
I personally own three pieces of this cookware.
It is handmade in France with Burgundy clay found only in that region.
It is fired and glazed so that you can use it on your range top and in the oven. It needs to
be seasoned before you use it for the first time. The directions are in the pamphlet you receive.
The one I have gotten the most use out of it the Braiser.
It is a great size for the stove top casseroles, cobblers and dumpling type dishes. I use it
at least once a week. I can start something on the stove top and finish it off in the oven . Works very well with
cobblers where you need to heat up the fruit filling first before placing the cobbler crust on top to bake.
The braiser has a tendency to have a hot spot in the middle on my gas range and you really have to
turn the heat way down.
It retains heat very well! Make sure you stir the middle often to keep it from sticking.
Clean up is breeze. Washes right up with soap and a little nylon scrubby that I use for my
non-stick pans. Burned food comes right off.
I also have a Dutch oven size that I have used in place of cast iron. I have used it to make Dutch
Oven Swiss Steak. The meat is browned on the stove top and the dish is finished in the oven. has the same great
non-stick interior and looks fantastic on the table.
I highly recommend these to anyone who wants to have a beautiful dish to cook and serve in. They
are gorgeous!
