For Pancakes
Preheat your griddle or skillet.
Mix the egg and milk together. Add to the gluten free mix until smooth. Lightly grease your griddle. Using a 1/4
cup measuring cup, pour out your pancakes on the griddle. Turn them over when small bubbles appear on the surface
and the bottom is golden brown. Cook for another 30 seconds to 1 minute more. Remove to a platter and
keep them hot in the oven until you have cooked them all. Makes about 1 dozen 3" pancakes.
