 Using your own Gluten Free Biscuit Baking Mix!

A yummy breakfast is just minutes away! Fry up some bacon or sausage and warm up the syrup! Let's eat!

Preheat your griddle or skillet.

Mix the egg and milk together. Add to the gluten free mix until smooth. Lightly grease your griddle. Using a 1/4 cup measuring cup, pour out your pancakes on the griddle. Turn them over when small bubbles appear on the surface and the bottom is golden brown. Cook for another 30 seconds to 1 minute more. Remove to a platter and keep them hot in the oven until you have cooked them all. Makes about 1 dozen 3" pancakes.

Don't stop there. Get creative! Try some of the following variations or come up with your own.

Add 2 cups grated apples, 2 TB sugar, and 1 TB lemon juice to the batter.

Add 1 cup mashed banana, 2 Tb sugar, and 1 TB lemon juice to the batter. Or add sliced bananas to the batter and gently stir in.

Add 2 TB sugar to the batter. Mix in 1 cup fresh or frozen berries.

Fold in 1/2 cup canned or homemade whole cranberry sauce.

Add the zest of 1 orange and replace 1/3 cup of milk with orange juice. Add 1/3 cup chopped pecans if desired.
