Quickly Mix No-Knead Cinnamon Rolls

Using your own Gluten Free Biscuit Baking Mix.
Warm, drippy,soft,tasty cinnamon rolls in 45 minutes! What more could you want. These are very good.
- 4 cups gluten free "biscuit" mix
- 1/4 cup sugar
- 2 large eggs
- 1/2 cup plus 2 TB water or milk
- 1 tsp gluten free vanilla extract
- Cinnamon Schmear ( below)
- Icing Glaze (below)
Whisk together the dry ingredients in a large bowl. Mix together the eggs, water and vanilla. Combine the wet
with the dry and mix together.
Flatten the dough into a rectangle on a piece of lightly floured parchment paper, cover and let rest for 15
minutes. Meanwhile, preheat the oven to 350 degrees. Make the cinnamon schmear.
When the 15 minutes is up, roll the dough into a 12"x15" rectangle (measure the size on your parchment paper).
Spread the cinnamon schmear onto the dough evenly and sprinkle with raisins, pecans or chocolate chips if
desired.
Starting on the short end of the dough rectangle, carefully roll it up over the filling using the parchment
paper to help you roll the dough into a log shape. Cut* the cinnamon rolls into 12 1" slices.
Place the rolls, cut side up, in a greased 9x13 pan. Bake for 23-27 minutes of until golden brown. Cool in the
pan for 15 minutes before spreading with the icing glaze. Serve warm. Makes 12 rolls.
* To cut the rolls, slide dental floss under the roll. Hold one end in each hand. Bring the floss up and over
the top of the roll and cross the ends pulling tight and cutting through the roll. This maintains the round shape
better than a knife.
Cinnamon Schmear
- 3/4 cup packed brown sugar
- 1 TB corn starch
- 2 tsp cinnamon ( can add more if you like)
- 3 TB butter or vegetable shortening, softened
- 2 TB water
- 1/2 cup diced pecans, raisins or chocolate chips, if desired
Mix all the ingredients together except the nuts, raisins or chocolate chips. should form a thick paste. If not,
add a little more water.
Icing glaze
- 1 cup powdered sugar
- 1 tsp gluten free vanilla extract
- 3 TB cream,water,milk or coffee creamer
Mix all together and drizzle over cinnamon rolls.
Now for another variation!
Butterscotch Rolls
Place 2 tsp of melted butter, 2 tsp brown sugar and 2 or 3 pecans in the bottom of 12 greased muffin cups. Place
the cut cinnamon rolls over the top. Bake as for above. Cool only 5 minutes in the pan before inverting onto a
cookie sheet. You could also place the sticky bun mixture in a 9x13 pan and cook that way instead of using muffin
cups.
