  • 9 cups mixture of Gluten Free Rice, Corn and Chocolate Chex ®cereal
  • 1 cup gluten free semisweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup butter
  • 1 tsp gluten free vanilla extract
  • 1 1/2 cups powdered sugar

In a large microwave safe bowl, pour in the cereal. In a 1 quart microwave safe bowl, microwave the chocolate chips, peanut butter and butter on high for 1 minutes, stir and microwave for another 30 seconds or until smooth. Stir in the vanilla. Pour over the cereal and stir to coat. Pour the cereal into a 2 gallon size zip type bag. Add the powdered sugar. Seal up the bag and shake. Spread the cereal out on parchment covered baking sheets and cool. Store in an airtight container. Makes 9 cups
