Crust-Less Italian Quiche with a Quick Marinara
Sauce

1/2 lb. Italian sausage (mild or hot-your preference)

1 cup shredded mozzarella cheese

1 cup shredded Monterey jack cheese

1/2 chopped onion

1 chopped green pepper

1 chopped red pepper

3 eggs

1 cup half and half, soy milk or soy creamer (non-flavored)

1 tsp minced garlic
Preheat the oven to 400 degrees
Cook sausage in a skillet until no longer pink. Drain. Sprinkle the sausage in a 9" pie plate.
Layer the cheeses, onion and peppers on top. Place the eggs in a large bowl and whisk until combined. Add the half
and half and garlic and whisk again.
Pour over the sausage mixture in the pie plate and bake at 400 degrees for 25 to 30 minutes or
until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Serve with marinara
sauce and a salad. Sprinkle Parmesan cheese over the top if desired.
