Gluten Free Gingerbread
and Gingerbread Mix

 

This gingerbread can be made into a convenient mix that you can keep on hand so you can whip up a spicy gingerbread cake anytime you wish.

This would also make a great gift for your celiac friends.

1 cup gluten free biscuit mix
1/4 tsp baking powder
2 Tb sugar
1/4 tsp ground ginger
1/4 tsp ground cloves or allspice
1/2 tsp cinnamon

Combine all the ingredients together in a bowl. This can be stored in zip type bags for use later, or go ahead and make your gingerbread now!

Preheat the oven to 350 degrees

To the above dry ingredients, you will need:

1/4 cup water
1/4 cup molasses
1 egg yolk only

Combine the above liquid ingredients together in a small bowl. Add half of them to the dry ingredients and beat with an electric mixer for 1 1/2 minutes on medium low speed. Add the other half of the liquid ingredients and beat for 1 more minute, scrapping the sides of the bowl.

Pour the batter into a greased non-stick 6"x4" loaf pan and bake for 30 to 40 minutes or until a toothpick inserted near the center comes out clean. Remove from the oven, cool in the pan for 5 minutes and turn out on a rack to cool completely.

Serve with whipped cream or fruit topping.

Makes 6 servings.

You could also split the gingerbread in half horizontally and spread the bottom half with whipped topping or lemon curd and then place the top half back on. Slice and serve with ice cream.
