Gluten Free Basics

All the recipes that have been developed for this website use whole grain flours. The main ingredient in all baked goods is whole grain brown rice flour and whole bean flour. Having a gluten intolerance can make it difficult to get enough whole grains in your diet. Here are some ways you can eat more whole grains.

  • Use only whole grain gluten free flours in your baking and cooking.
  • Make your own granola and use the gluten free rolled oats available.
  • Try some of the more exotic grains, like Quinoa as a pilaf substitute.
  • Start making your own whole grain gluten free bread and rolls.
  • Start cooking and baking from scratch! It tastes so much better!

 

flower bullet pointAll recipes follow these guidelines:

  • Butter is unsalted
  • Eggs are large
  • Salt is regular table salt
  • Sugar is granulated sugar
  • Brown sugar can be light or dark unless specified
  • Vegetable oil I use is canola
  • Chocolate chips are semi-sweet
  • Baking powder is Rumford® brand non-aluminum
  • Milk is 2% or you can use soy milk or gluten free coffee creamers
  • Cream Cheese is the reduced fat kind
  • Molasses is unsulfered ( not blackstrap)
  • Yeast is SAF® brand yeast
  • Xanthum gum is necessary to help bind baked goods together

flower bullet pointUltra Gel®:  I use this corn based product to help retain the moisture in my gluten free baked goods. I have left cookies out for 5 days to see if they will still retain their moisture. The ones with the added Ultra Gel are still soft and pliable but the ones without it are dry and crumbly. Ultra Gel is also a great thickener for gravy, soup and stews and sauces or dressings. Just sprinkle a little over the top of your liquid and whisk or stir in. Allow to sit or gently cook for a minute to see if it is thick enough. If not, add a little more. Keep adding until you achieve the thickness you want. It works well with either hot or cold liquids. It also works in making canned apple pie and peach pie filling and for jams and jellies. I really like this product!
