Cinnamon Apple Chex® Mix

5 cups Gluten Free Honey Nut Chex® cereal

1 cup salted whole almonds

1/4 cup butter

1/3 cup brown sugar, packed

2 tablespoons light corn syrup or 1 tablespoon Xagave

1 tsp sweet spice blend or cinnamon

1 cup chopped dried apples

1/2 cup gluten free white chocolate chips
In a large microwave safe bowl, combine the cereal and the almonds. In a 2 cup silicone measuring
cup, microwave the butter, brown sugar, corn syrup and sweet spice on high for 1-2 minutes or until it comes to a
boil, stir every minute. Pour over the cereal and stir to coat. Microwave for 3 minutes on high stirring every
minute. Add the apples and microwave for about 2 minutes, stirring after every minute. Pour onto parchment lined
baking sheets and cool. Stir in chips when cool and store in an airtight container. Makes 8 cups.
